Studying for finals means keeping things simple, quick, and cheap. Grilled eggplant topped with chunky peanut butter sautéed to taste with red bell peppers, green onions, garlic, soy sauce, sesame oil, lemon, pepper, and salt, and topped with basil for good measure.
Here's to three more days of finals week pain.

ReplyDeleteHow did you think of that? Reminds me of a filipino dish called kare-kare, where pieces of veggies and oxtail are drowning in a viscous, tasty peanut sauce. You're supposed to make it out of raw peanuts but I think my mom cheats and uses peanut butter haha
You're making me reconsider eggplants as edible, when I usually go bleurgh.
ReplyDeleteDy, can I just say that I love that that dish is called kare-kare? Even though I know it's not pronounced like "care," it tastes like such a comfort food, with or without peanut butter.
